Ingredients:
For the cookies:
1 cup roughly chopped Bella Viva Orchards Certified Organic Dried Pears
½ cup roughly chopped Bella Viva Orchards Certified Organic Medjool Dates
¼ cup roughly chopped Bella Viva Orchards Certified Organic Raw Almonds
¼ cup + 1 tablespoon Bella Viva Orchards Almond Butter
½ cup Bella Viva Orchards Almond Flour
1 tablespoon water
1 teaspoon pure vanilla extract
A pinch of kosher salt
For the filling:
1/3 cup roughly chopped Bella Viva Orchards Certified Organic Medjool Dates
2 tablespoons water
1 tablespoon Bella Viva Orchards Almond Butter
½ teaspoon ground cardamom
½ teaspoon pure vanilla extract
A pinch of kosher salt
Instructions:
Prepare the cookies: Remove pits from Dates. In the bowl of a food processor, pulse the cookie ingredients until you get a chunky mixture that holds together.
Line a baking sheet with parchment paper. Using a rounded tablespoon, scoop out portions of the mixture, roll into balls and place onto the prepared cookie sheet. Press a deep fingerprint into the middle of each ball.
Prepare the filling: Remove pits from Dates. In a clean food processor bowl, add the filling ingredients and mix until you get a very smooth mixture. Using a rounded teaspoon, drop the filling into the indentation of each cookie.
Refrigerate overnight in a sealed container.
