As mentioned by director of operations, Victor Martino, "it takes good fruit to make good dried fruit." When we harvest peaches and nectarines we don't pick all the fruit on a tree at once, we only pick the good ripe fruit. We will come back to a tree many times before all the fruit is picked.

Our organic fruit is dried in a dehydrator. Dehydrating organic fruit reduces the amount of time it can oxidize. Oxidation will remove fruit's color, taste, and nutrients. Dehydration is a quicker drying process that will better preserve the nutrients and flavor in organic fruit and keep it healthier. |
