Winter Pruning
If you have any stone fruit trees, such as peaches, apricots, and cherries, you may want to prune your trees now. Here at Bella Viva Orchards, we have just finished pruning our organic peach orchard. If you have a good eye, you may have noticed in the picture to the left, the shredded brush on the ground. Instead of burning the brush, we are able to leave it on the ground and mow it up, which is better for the atmosphere as well as provides nutrients for the trees. Shredding brush is just one of the many steps to keeping this a "sustainable" farm.
If you live where temperatures can dip below freezing you will probably want to wait until early spring to prune your trees. Studies have shown that if a tree is hit by a frost after recently being pruned, the tree will have poor blossom survival and be less resistant to cold weather.

Dormant Spray
While the buds are still tight and unswollen, it is a good time to apply a dormant spray. We use a certified organic mix of copper and oil. This protects the tree from peach leaf curl, San Jose Scale, peach twig boar, and helps kill over wintering mite eggs. Your local nursery should have more information on this material, application, and alternatives.

No-Bake Fruit Cake Recipe
Here is a recipe for an easy fruit cake. I was quite skeptical when this Fruit Cake was first put in front of me and I didn't think I would be too interested. Luckily I took a bite, otherwise I would have no idea what I was missing out on. This Fruit Cake is surprisingly delicious and delightfully chewy. It is now one of my favorite desserts. Try serving it once and you will see how fast it disappears.
Ingredients:
- 2lbs Bella Viva dried peaches, nectarines, apricots
- 1 1/2 cup Bella Viva raisins
- 4 cups almonds (do not chop)
- 2 cups walnuts (chop large)
- 1lb Marshmallows
- 1lb crushed graham crackers, crushed fine
- 3/4 cup of canned milk
Instructions:
Chop the dried fruit (or use Bella Viva’s already diced fruit) and mix well with nuts and graham cracker crumbs. In a pot, mix milk and marshmallows. Meld over heat until marshmallows are melted. Pour over the mixture in the bowl and mix. Grease small cake pans and form mixture into them. Garnish with dried cherry and bay leaf. Store in freezer. Slice frozen for best results. |
